Yep, he'd break it off every now and then and let the whole thing boil in the pot into which it was being skillfully led. I've seen other ways of making noodles, including stretching and doubling, stretching and doubling, until it had been stretched and doubled into a whole length of perfectly sized noodles. I've also seen the dough rolled out and a knife used to rapidly slice it into noodles.
